Ewan Methven pleaded guilty to murdering Phoenix Spencer-Horn at their home in East Kilbride last year.

The 27-year-old attacked his girlfriend with three knives, stabbing her 20 times before mutilating her body and removing her head.

Prosecutors say the murder took place around midnight on November 16th 2024, but he did not report her death until two days later.

The postman, who worked for Royal Mail, spent the remainder of the weekend driving Spencer-Horn’s car, going through her phone, viewing internet pornography and attempting to buy cocaine.

The day after the murder, Ewan sent his girlfriend’s mother a message from her phone saying: “Hey sorry I’ve just woken up xxx” further claiming she was “alive and well” and was “all good”.

A Glasgow court heard that the pair had been dating for two years after meeting at a family party.

Prosecutor Christopher McKenna told a hearing on Tuesday: “The accused murdered his girlfriend, Phoenix Spencer-Horn, in the top-floor flat they shared. Late on Saturday November 16 he strangled her and stabbed her. He dialled 999, but not until November 18.

“Her mutilated and decapitated body was discovered only on November 18.

“The police recovered texts between the accused and Phoenix. He complained of feeling lonely because of the hours she worked and he apologised.”

The court heard that the couple ordered a takeaway around 8pm, and according to the delivery driver, the killer “did not appear to be drunk or under the influence”.

However, in his call to emergency services, Methvenby claimed he killed Phoenix in a “psychotic episode” induced by cocaine, alcohol and steroids.

The court also heard that the deceased had seen her mother the day before her death and had been in “good spirits” at work on the day she was killed.

Methven pleaded guilty to murder and attempting to defeat the ends of justice, and is set to be sentenced next month.

Following the hearing, Detective Chief Inspector Susie Cairns said the killer will now “face the consequences of his actions.”

“Violence such as this is never acceptable in our communities, and we will work tirelessly to ensure those responsible are brought to justice.

“My thoughts remain with Phoenix’s family and friends as they continue to try to come to terms with what happened,” she added.

Loved ones of the 21-year-old who was nicknamed ‘Phe’ set up a GoFundMe to raise money for her funeral and to support her family.

“A little help for the family at this difficult time,” the fundraiser reads.

“Phe was and is adored by her family. Anyone who knew Phe would know she would be greatful to anyone who is able to support her family at this time.

“This will also help give Phe the day she deserves,” the page continued.

“Any amount surplus to giving Phe the day she deserves will be donated to the charity Woman’s Aid.”

241 donors raised £6,465, exceeding the initial £5,000 target.
