Friends and loved ones of a man who died after an assault in East Cork are raising money to support his family during this challenging time.
Ian Baitson, 32, lost his life after being stabbed by a bladed weapon during an attack in the car park of the Eurospar on Newtown Rd in Cobh. Several passersby rushed to help him after the incident, including a young German student and a doctor, who managed to stem the bleeding before emergency services could arrive. He sadly passed away four days later at Cork University Hospital (CUH) on Tuesday.
The young man was a proud father to two children, Zoey and Myles, and is also remembered by his mother Helen, Myles’ mom Sarah, uncles, aunts, cousins, relatives, dear friend Gary and his wide circle of friends.
A new fundraiser has been launched by the Cobh community to help Ian’s loved ones manage his funeral costs and support his kids in the many difficult days, weeks and months ahead. A portion of the money raise will also go towards the CUH team that fought to save the young father’s life.
Organiser Shane Connolly said: “Those of us lucky enough to have known Ian, fondly remember his infectious laughter, enthusiastic greetings and smile that could illuminate even the darkest of rooms. He was not only a great family man, but a great friend and colleague.
“In response to numerous requests on how to offer further support to Ian’s family, we are setting up this GoFundMe page. Due to the suddenness of Ian’s passing, this fund will be used to assist with the unexpected expenses associated with his funeral arrangements.
“The ICU at CUH holds a special place in our hearts for the remarkable work they continue to do, and the extraordinary care they extend to patients and their families. By making a donation in Ian’s honour, we express our deepest gratitude to the dedicated healthcare professionals who tirelessly serve our community through the most difficult of times.

Earlier today, Gardaí investigating the Cobh attack arrested a man on suspicion of murder. The man is currently detained at a Cork Garda Station under Section 4 of the Criminal Justice Act 1984.
Mr Baitson’s family have also thanked two people who went to his aid and did their best to try and save his life.
In a death notice for Mr Baitson on Rip.ie last night, his family said: “We, Ian’s family wish to thank our extended family and friends for their unwavering help and support throughout this hard time, Arian and Liam whose heroic efforts kept Ian with us so we were able to say our goodbyes.”
The family said their quick actions had at least given time to those “who travelled home from abroad to say their last goodbyes”.
The Baitson family also thanked the staff at CUH and the first responders “who helped prepare us for the devastating loss of a beautiful and wonderful person”.
