Minutes from the M20, at the edge of the Kent Downs, and just four miles from burgeoning Folkestone, one Kent restaurant continues to stand out among the UK’s top spots to eat. The Hide and Fox near Hythe currently boasts a Tripadvisor Best of the Best Traveller’s Choice award and a Michelin Star. It also won three AA Rosettes in 2021.
Described in the Michelin Guide as “high-quality cooking, worth a stop”, The Hide and Fox attributes its success to couple Allister Barsby and Alice Bussi who between them lead kitchen and front of house staff to “bring a fresh perspective to the Kent dining scene”. The restaurant on its website also goes on to praise the pair’s “illustrious careers” before their move to the south Kent coast, as well as the entire Hide and Fox team.
The restaurant said: “The couple has won plaudits and awards due to their commitment to the quality of the food on the plate, and the seamless experience of modern fine dining.” It continued: “Together, they have created Hide and Fox to deliver truly exceptional dining, driven by flavour, enhanced by great wines, and offered always with the beautiful customer experience they both demand.”

The Hide and Fox is currently listed third in Tripadvisor’s Travellers’ Choice Best of the Best Restaurants – an accolade the review site said is bestowed on fewer than one per cent of its eight million listings, and which signifies “the highest level of excellence”. Tripadvisor declared: “We award Traveller’s Choice Best of the Best to restaurants with a high volume of above-and-beyond reviews and opinions from our community over a twelve-month period.
“Each winner has passed our rigorous trust and safety standards.” It added: “Your opinions have power. Our Traveller’s Choice Best of the Best winners are chosen based on your reviews and ratings.”
The Michelin Guide deemed the restaurant on The Green in Saltwood a “delightful neighbourhood restaurant” with “high-quality cooking”. It suggested: “Start your night right with a cocktail at what was once the village shop and is now a delightful neighbourhood restaurant with a contemporary style.
“One side of the room retains its original wooden fitted shelves – now filled with wines – and large monochrome prints decorate the walls.” The Guide added: “The best ingredients from Kent’s larder feature in refined, delicate dishes, which present an appealing blend of textures and really focus on details.”
