A once popular pub in Spalding has been given a new lease of life after closing down earlier in the year. The Royal Mail Cart on Pinchbeck Road is now under new management and they are hoping to bring some “community spirit” back to the town.
The pub has undergone major refurbishment and its much-anticipated reopening will take place on Friday, November 4. General manager, Chris Huggett, is also head chef at the Royal Mail Cart and will be serving up classic and traditional cuisine, but with a twist.
The 50-year-old, who has experience at a four rosette restaurant and was trained by Gordon Ramsay’s ex-head chef, has returned to his home town of Spalding to start the new venture. Some examples of dishes include shepherd’s pie with confit lamb and chilli con carne with pork belly.

Mr Huggett wants to support the local community while providing a top notch drinking and dining experience. He said: “Our ethos has been to make sure it’s a family-orientated pub. We want to bring back the community spirit by getting the darts and pool table in, support our local bowls team which is right next door and bring the community back together in their local pub.
“We’re not going down the fine dining route. Our remit is to bring very good ingredients and do them very well but in a classic way.”
The opening night will be a soft launch with some entertainment. Mr Huggett added: “We’ll have a jazz/soul singer with drinks and food in the evening. The restaurant will be open and the bar with just a bit of light entertainment in the background.”
Once fully reopened, the Royal Mail Cart will be open Wednesday to Saturday (11am-2.30pm and 6pm-9pm) and Sunday (12pm-4pm) for Sunday roast.
