The Royal Mail Cart in Spalding to launch new menu

Punters will soon be able to test a chef’s new menu as a much-missed re-opened pub prepares to serve food once more.

Carl Fernandes of Spalding, who has worked in the industry for 37 years, says he ‘can’t wait’ to be back in The Royal Mail Cart kitchen, following a six month break.

After the popular pub on Pinchbeck Road, Spalding, re-opened on August 21, the team prioritised drink sales following the short turn around they had to get everything up and running again.

Visitors will now be able to get the best of both worlds as the new menu is set to be released next week – with the first Sunday roast being served this weekend (September 14).

Carl, who worked as a chef at the pub for a year prior to its closure said: “I’m really looking forward to being back in the kitchen.

“Having been in the industry for 37 years I am very passionate and want to cater to our customers to make sure they get a really nice tasty meal, which has been freshly prepared and is a reasonable price.

“All of the food we make will be good, honest and fresh, which will all be made on site using produce from local suppliers.

“When we were told the pub was closing it was a bit of a surprise.

“You put your heart and soul into a place and for them to close the doors when we had started to build up a good business wasn’t the outcome we had hoped for, but I am looking forward to the future.”

Although the menu for next week has not yet been confirmed, a new pizza oven is due to be installed soon.

New owner, Padraig Hughes, who joined forces with former general manager Sarah Cox, is pleased with the positive response and support the business has received.

He said: “Everything is kicking into shape. Its been a busy time but I’m enjoying it – its exciting.

“I wouldn’t have been able to do it without the staff – they are a great credit.”

The carvery will be served between 12pm and 4pm, and is set to feature a selection of traditional roasted meat with all of the trimmings.
