A popular Spalding venue is set to reopen its doors next month.
Pinchbeck Road pub-restaurant The Royal Mail Cart is currently undergoing refurbishment ahead of a return to business.
Head chef Chris Huggett has returned to the area where he grew up, and is promising a menu that delivers traditional favourites… ‘with a twist’.
Meanwhile, the venue will maintain its pub feel, including running pool and darts teams.
Firm punter favourites BT Sport and Sky Sports will be on the screens to ensure drinkers can keep up with the latest match action.
The Royal Mail Cart’s restaurant, kitchen and lounge bar have all undergone makeovers while the finishing touches are being applied internally and externally ahead of the re-opening on November 2.
It is hoped a live band can get revellers in the mood for celebration on opening night.
While opening seven days per week, food will initially be served from Wednesday to Sundays – including lunch and dinner.
Of course, Sunday lunch and bar snacks will also be available, along with vegan and vegetarian options, and with breakfasts due to start later in the year.
It is also planned to soon be also offering food on Mondays and Tuesdays.
“We want to serve favourites with a twist,” explained Chris, a Three Rosette chef who fondly remembers his younger years drinking at the venue.
The head chef ‘s vision is to infuse some added flavour and intrigue to what he describes as a ‘fine-end gastro pub’ menu.
It is also hoped that The Royal Mail Cart will eventually be able to re-install the once-popular children’s play park to the rear of the property to keep the young ones entertained.
The venue announced its re-opening on social media to an encouraging response on Facebook.
